Taken our deposit and became unresponsive

Timeline of a ghost maternity nurse
March 2021 £3000 deposit paid
July 2021 2 weeks before my due date she was supposed to be on call but was babysitting the whole time and wasn't available for even a prearranged babysitting session.
The phone line got cut off while we were in the middle of a conversation discussing the birth plan. She replied the next day and said “I dropped my phone and smashed the screen as I was talking to you”.
August 2021 She was tested COVID positive. Refunded 50% of the deposit, and she said “the remaining 50% I will retain for when we do start” but we never heard back from her for the next three months.
November 2021 she said “I can confirm that since you are fully canceling I am happy to refund the outstanding balance. I will need to organize to claim it from the holding account which I will do tomorrow if that's ok and will be able to send it back to you as soon as I receive it.”
Dec 2021, she said "I am overseas helping to vaccinate/test against covid."
Jan 2022, she said "I have yet to return to the UK. I am going to ask a family member to see if they can do a transfer of some if not all of the money and I will come back to you and let you know when it is done as I have no access to that account whilst I am here and the internet is sporadic"

After 7 months since our baby was born, she never turned up to look after our newborn baby, stopped replying to our emails and we are still chasing our deposit to be returned.
Feb 2022, Still no response to either email, phone calls, or even after signed and tracked letter to two separate addresses.
